Getting ready for summer

It’s time that summer properly arrived and brought us sunny days and long evenings, spending time outside, relaxing in the garden, going to the beach, holidays, festivals and events, picnics, barbecues, lots of time with friends and family, the perfect blue sky stretching into the distance.

I hope that 2024 will be your perfect summer but for some people summer is not quite so idyllic.

If you know someone who struggles over summer then here’s a few things that we can help with:

Summer Recipe

I thought I’d share one of my favourite summer recipes, it’s quick to prepare and full of fresh vegetables and coriander so I hope that some of you will find it useful.

Imagine one of those long hot summer days when you don’t want to cook but you want something tasty that feels nice in the tummy…

Raw Pad Thai

Ingredients (serves4)

  • 3 medium courgettes

  • 3 large carrots

  • 2 spring onions, chopped

  • 1 cup finely sliced red cabbage

  • 1 cup cauliflower florets, cut into bite size pieces

  • 1/2 cup chopped fresh coriander

  • Optional – a cup of bean sprouts, 1/2 cup of peanuts

For the sauce

  • 1/4 cup tahini

  • 1/4 cup nut butter (almond, peanut, cashew)

  • 1/4 cup soya sauce (or tamari if gluten-free)

  • 2 tbsp agave or maple syrup (or adjust to taste, I find this too much)

  • 2 tbsp lime or lemon juice

  • 1 clove garlic, grated or finely chopped

  • 1 tsp ginger root, grated or finely chopped

Instructions

  • Use a spiralizer (I use a potato peeler) to create noodles/strips from the carrots and courgettes. Place them in a large mixing bowl and top with the other vegetables.

  • Mix the sauce ingredients in a separate bowl. The sauce will be thick, but will thin out after it’s mixed with the vegetables.

  • Pour the sauce over the vegetables and mix together.


It’s really good after being in the fridge for a day for everything to marinade together but if I’m honest mine never makes it that far, it’s too delicious!!

We have tried really hard to hold our pricing for as long as we can but we have to admit that it’s been tough and so we’re now having to do our first increase in over 5 years.

From 17th June our new pricing will be:
